- 4 large potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
Instructions
- Place diced potatoes in a pot and add broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in heavy cream and simmer for 5 more minutes.
- Blend until smooth or leave chunky as preferred.
Notes
- You can add salt and pepper to taste.
- For extra flavor, top with shredded cheese or chopped green onions.
