Ingredients

  • 2 medium sweet potatoes
  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prick sweet potatoes with a fork and bake for 45-50 minutes until tender.
  3. Heat olive oil in a pan and sauté onion and garlic until soft.
  4. Add ground turkey and cook until browned.
  5. Stir in diced tomatoes, black beans, chili powder, cumin, and salt. Simmer for 10 minutes.
  6. Slice open baked sweet potatoes and stuff with turkey chili.
  7. Top with avocado slices and fresh cilantro.
