A hearty and healthy meal combining avocado, turkey chili, and sweet potatoes.
Ingredients

- 2 medium sweet potatoes
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, drained
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Prick sweet potatoes with a fork and bake for 45-50 minutes until tender.
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Add ground turkey and cook until browned.
- Stir in diced tomatoes, black beans, chili powder, cumin, and salt. Simmer for 10 minutes.
- Slice open baked sweet potatoes and stuff with turkey chili.
- Top with avocado slices and fresh cilantro.

- Use ripe avocados for the best flavor.
- Adjust chili spices to your preference.
- Store leftovers in an airtight container for up to 3 days.
