A hearty and healthy dish featuring sweet potatoes stuffed with a flavorful turkey chili and topped with creamy avocado.

- 4 medium sweet potatoes
- 1 lb ground turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 avocado, diced
- Fresh cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
- While sweet potatoes bake, heat a skillet over medium heat. Add ground turkey and cook until browned.
- Add onion and garlic to the skillet and cook for 2-3 minutes until softened.
- Stir in black beans, diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Simmer for 10 minutes.
- Once sweet potatoes are done, slice them open and fluff the insides with a fork.
- Fill each sweet potato with the turkey chili mixture.
- Top with diced avocado and fresh cilantro before serving.
Notes
- For a spicier chili, add 1/2 tsp of cayenne pepper.
- Store leftovers in an airtight container for up to 3 days.
- Substitute ground chicken or beef for turkey if preferred.
