Ingredients

- 1 lb ground beef
- 1/2 lb ground pork
- 1/2 cup breadcrumbs
- 1 egg
- 2 tbsp chipotle in adobo, minced
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C).
- Mix all ingredients except olive oil in a bowl until well combined.
- Shape into 1.5-inch meatballs.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Brown meatballs for 2 minutes per side.
- Transfer skillet to oven and bake for 15 minutes.
- Let rest 5 minutes before serving.
Notes
- For spicier meatballs, add extra chipotle.
- Substitute ground turkey for a leaner option.
- Freeze uncooked meatballs for later use.
