- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup barbecue sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 avocado
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp fresh parsley
- 1 tbsp fresh dill
- 1 clove garlic
- 2 cups cooked rice or greens
Instructions
- Preheat oven to 375°F.
- Mix ground beef, breadcrumbs, egg, barbecue sauce, garlic powder, onion powder, salt, and pepper in a bowl.
- Form into meatballs and place on a baking sheet.
- Bake for 20-25 minutes until cooked through.
- Blend avocado, Greek yogurt, lemon juice, parsley, dill, and garlic until smooth.
- Serve meatballs over rice or greens and drizzle with avocado goddess sauce.
