Ingredients

- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1/4 cup coarse sugar for rolling
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a bowl, whisk flour, baking soda, cinnamon, ginger, cloves, and salt.
- In another bowl, beat butter and sugar until light and fluffy. Add egg and molasses, mixing well.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Shape dough into 1-inch balls, roll in coarse sugar, and place on baking sheets.
- Bake for 8-10 minutes until edges are set. Cool on wire racks.
Notes
- Store in an airtight container for up to 5 days.
- For softer cookies, slightly underbake.
- Use dark molasses for deeper flavor.
