- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in an oven-safe skillet over medium heat.
- Sauté onion and bell pepper until soft, about 3 minutes.
- Add spinach and cook until wilted, about 2 minutes.
- Whisk eggs with salt and pepper in a bowl.
- Pour eggs over vegetables in the skillet.
- Sprinkle cheese evenly on top.
- Cook on stovetop for 3 minutes without stirring.
- Transfer skillet to oven and bake for 12-15 minutes until set.
- Let cool slightly before slicing.
