  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat the eggs. Add the granulated sugar, brown sugar, oil, and vanilla extract. Mix well.
  4. Stir the dry ingredients into the wet ingredients until just combined. Fold in the grated zucchini and walnuts.
  5. Pour the batter into the prepared loaf pan. Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
