Description

A quick and easy fried rice recipe that tastes better than takeout. Perfect for using leftover rice and customizable with your favorite proteins and veggies.


Ingredients

  • 3 cups cooked rice (preferably day-old)
  • 2 tbsp vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 green onions, sliced

Instructions

  1. Heat 1 tbsp oil in a large pan over medium-high heat.
  2. Add beaten eggs and scramble until fully cooked. Remove and set aside.
  3. Add remaining oil to the pan. Sauté garlic and ginger for 30 seconds.
  4. Add vegetables and stir-fry for 2-3 minutes.
  5. Add rice, breaking up any clumps. Stir-fry for 2 minutes.
  6. Mix in soy sauce, oyster sauce, and sesame oil.
  7. Return scrambled eggs to the pan and mix well.
  8. Garnish with green onions and serve hot.

Notes

  • Day-old rice works best as it’s less sticky
  • Add cooked chicken, shrimp, or tofu for extra protein
