- 1 cup almond flour
- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1/4 cup honey
- 1/4 cup almond butter
- 2 eggs
- 1/2 cup almond milk
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Mix almond flour, whole wheat flour, oats, baking powder, cinnamon, and salt in a bowl.
- In another bowl, whisk eggs, honey, almond butter, almond milk, and vanilla extract.
- Combine wet and dry ingredients until just mixed.
- Gently fold in blueberries.
- Divide batter into muffin cups, filling 3/4 full.
- Bake for 20-25 minutes until a toothpick comes out clean.
- Let cool before serving.

- Swap honey for maple syrup for a vegan option.
