A refreshing twist on classic cheesecake with blueberries and lime.
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 2 tbsp sugar
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1/4 cup lime juice
- 1 tsp lime zest
- 1 cup fresh blueberries
Instructions
- Preheat oven to 350°F.
- Mix graham crumbs, melted butter, and 2 tbsp sugar. Press into 8×8 pan.
- Beat cream cheese and 1/2 cup sugar until smooth.
- Add eggs one at a time, then lime juice and zest.
- Fold in blueberries.
- Pour over crust. Bake 40 minutes.
- Cool completely before cutting.
Notes
- Use room temperature cream cheese for smoother texture.
- Fresh lime juice works best.
- Chill before serving for cleaner cuts.
