Description

Delicious blueberry vanilla cheesecake cupcakes with a creamy filling and fresh blueberries.


Ingredients

  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter. Press into cupcake liners.
  3. Beat cream cheese and sugar until smooth. Add egg and vanilla, mix well.
  4. Fold in blueberries gently.
  5. Spoon filling over crusts in cupcake liners.
  6. Bake for 20-25 minutes. Cool before serving.
