Delicious blueberry vanilla cheesecake cupcakes with a creamy filling and fresh blueberries.
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup fresh blueberries
Instructions
- Preheat oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter. Press into cupcake liners.
- Beat cream cheese and sugar until smooth. Add egg and vanilla, mix well.
- Fold in blueberries gently.
- Spoon filling over crusts in cupcake liners.
- Bake for 20-25 minutes. Cool before serving.
Notes
- Use room-temperature cream cheese for smoother filling.
- Add extra blueberries on top for garnish.
