A hearty German bean stew, perfect for cold days. This dish combines white beans, vegetables, and smoked meat for a rich and comforting meal.

- 500g dried white beans, soaked overnight
- 200g smoked bacon, diced
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 bay leaf
- 1 tsp paprika
- 1 tsp marjoram
- 1 tbsp tomato paste
- 1.5 liters vegetable or beef broth
- 2 tbsp vinegar
- Salt and pepper to taste
Instructions
- Drain soaked beans and rinse.
- In a large pot, fry bacon until crispy. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until soft.
- Add garlic, bay leaf, paprika, and marjoram. Cook for 1 minute.
- Stir in tomato paste.
- Add beans and broth. Bring to a boil, then reduce heat and simmer for 1.5 hours or until beans are tender.
- Stir in vinegar and reserved bacon. Season with salt and pepper.
- Serve hot with crusty bread.
Notes
- Soaking beans overnight reduces cooking time.
- Use smoked sausage if bacon is unavailable.
- Store leftovers in the fridge for up to 3 days.
