- 12 oz penne pasta
- 2 boneless, skinless chicken breasts, cubed
- 1 tbsp cajun seasoning
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 8 oz cream cheese, softened
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook pasta according to package instructions, drain, and set aside.
- Season chicken with cajun seasoning. Heat olive oil in a pan and cook chicken until browned, then set aside.
- In the same pan, sauté onion, garlic, and bell pepper until softened.
- Add cream cheese, heavy cream, and chicken broth. Stir until smooth and well combined.
- Mix in cooked pasta, chicken, and half of the cheddar and parmesan cheeses.
- Transfer to a baking dish and top with remaining cheese.
- Bake for 20 minutes or until bubbly and golden.
Notes
- Adjust cajun seasoning to your spice preference.
- Use rotisserie chicken for a quicker option.
- Store leftovers in an airtight container for up to 3 days.
