Ingredients

  • 2 lbs chicken thighs
  • 2 cups long-grain rice
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp allspice
  • 1 tsp paprika
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes per side.
  3. Remove chicken and set aside.
  4. Sauté onion, garlic, and bell pepper until soft.
  5. Add rice, thyme, allspice, and paprika. Stir for 1 minute.
  6. Pour in chicken broth and bring to a boil.
  7. Return chicken to the pot, cover, and simmer for 25 minutes.
  8. Remove from heat and let stand for 5 minutes before serving.
