Ingredients

- 2 lbs chicken thighs
- 2 cups long-grain rice
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tbsp olive oil
- 1 tsp thyme
- 1 tsp allspice
- 1 tsp paprika
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add chicken and cook until browned, about 5 minutes per side.
- Remove chicken and set aside.
- Sauté onion, garlic, and bell pepper until soft.
- Add rice, thyme, allspice, and paprika. Stir for 1 minute.
- Pour in chicken broth and bring to a boil.
- Return chicken to the pot, cover, and simmer for 25 minutes.
- Remove from heat and let stand for 5 minutes before serving.
Notes
- Use bone-in chicken for more flavor.
- Adjust spices to your preference.
- For extra heat, add a chopped scotch bonnet pepper.
