Ingredients

  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn kernels
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix cooked rice, black beans, diced tomatoes, corn, onion, bell pepper, garlic, taco seasoning, salt, and pepper.
  3. Transfer the mixture to a greased baking dish.
  4. Sprinkle shredded cheddar and Monterey Jack cheese evenly on top.
  5. Bake for 20-25 minutes until cheese is melted and bubbly.
  6. Garnish with chopped cilantro before serving.
