- 2 cups cooked rice
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn kernels
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tbsp taco seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix cooked rice, black beans, diced tomatoes, corn, onion, bell pepper, garlic, taco seasoning, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Sprinkle shredded cheddar and Monterey Jack cheese evenly on top.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Garnish with chopped cilantro before serving.
Notes
- Use leftover rice for quicker prep.
- Adjust taco seasoning to taste.
- Add cooked chicken or ground beef for extra protein.
