Ingredients

  • 1.5 lbs boneless, skinless chicken
  • 3 cups broccoli florets
  • 1/2 cup low-sodium chicken broth
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp ginger, grated
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. Place chicken at the bottom of the crockpot.
  2. In a bowl, mix chicken broth, garlic, soy sauce, honey, ginger, and black pepper.
  3. Pour the sauce over the chicken.
  4. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  5. Shred the chicken with forks, then add broccoli.
  6. If needed, mix cornstarch with 1 tbsp water and stir in to thicken the sauce.
  7. Cook for another 15-20 minutes until broccoli is tender.
