A simple and healthy slow-cooked meal featuring tender chicken and crisp broccoli in a savory sauce.
Ingredients

- 1.5 lbs boneless, skinless chicken
- 3 cups broccoli florets
- 1/2 cup low-sodium chicken broth
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp ginger, grated
- 1/2 tsp black pepper
- 1 tbsp cornstarch (optional, for thickening)
Instructions
- Place chicken at the bottom of the crockpot.
- In a bowl, mix chicken broth, garlic, soy sauce, honey, ginger, and black pepper.
- Pour the sauce over the chicken.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Shred the chicken with forks, then add broccoli.
- If needed, mix cornstarch with 1 tbsp water and stir in to thicken the sauce.
- Cook for another 15-20 minutes until broccoli is tender.
Notes
- Use fresh broccoli for best texture.
- Adjust honey and soy sauce to taste.
- Add red pepper flakes for a spicy kick.
