A simple and delicious chicken and mushroom dish made in a crockpot.
Ingredients

- 2 lbs boneless, skinless chicken
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp cornstarch (optional, for thickening)
- 2 tbsp water (optional, for thickening)
Instructions
- Place chicken in the crockpot.
- Add mushrooms, onion, and garlic.
- Pour in chicken broth and heavy cream.
- Sprinkle thyme, salt, and pepper over the ingredients.
- Cover and cook on low for 6 hours or high for 3 hours.
- If you prefer a thicker sauce, mix cornstarch and water, then stir into the crockpot during the last 30 minutes of cooking.
- Shred or slice the chicken before serving.
Notes
- For extra flavor, brown the chicken in a skillet before adding it to the crockpot.
- Serve over rice, pasta, or mashed potatoes.
- Leftovers can be stored in the fridge for up to 3 days.
