- 2 boneless, skinless chicken
- 1 lb shrimp, peeled and deveined
- 1 cup chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 bell pepper, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Add chicken and cook until lightly browned, about 3-4 minutes per side.
- Transfer the chicken to the crockpot.
- Add shrimp, chicken broth, diced tomatoes, bell pepper, onion, garlic, paprika, oregano, salt, and black pepper to the crockpot.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours.
- Serve hot with rice or crusty bread.
Notes
- You can use frozen shrimp, but thaw them before adding to the crockpot.
- Adjust seasoning to taste.
- For extra flavor, add a splash of lemon juice before serving.
