  • 1 lb shrimp, peeled and deveined
  • 1 cup chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken and cook until lightly browned, about 3-4 minutes per side.
  2. Transfer the chicken to the crockpot.
  3. Add shrimp, chicken broth, diced tomatoes, bell pepper, onion, garlic, paprika, oregano, salt, and black pepper to the crockpot.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours.
