Instructions
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25 minutes.
- Season chicken breasts with salt and pepper.
- Heat a skillet over medium heat and cook chicken for 6-7 minutes per side.
- Slice cooked chicken into strips.
- Divide roasted sweet potatoes and spinach between two bowls.
- Top with sliced chicken and feta cheese if desired.
