Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, and pepper. Roast for 25 minutes.
- Season chicken with paprika, garlic powder, salt, and pepper.
- Cook chicken in a skillet over medium heat for 6-7 minutes per side.
- Slice chicken and divide between two bowls with roasted sweet potatoes.
- Top with fresh spinach and red onion.
