Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup cooked brown rice
- 1 avocado
- 1 lime
- 1/2 cup black beans
- 1/2 cup corn
- 1/4 cup chopped cilantro
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp olive oil
Instructions
- Season chicken with cumin, chili powder, salt, and pepper.
- Heat olive oil in a pan and cook chicken for 6-8 minutes per side, until fully cooked.
- Let chicken rest, then slice into strips.
- In a bowl, mash the avocado with lime juice, cilantro, and salt to make guacamole.
- Assemble the bowl with rice, black beans, corn, tomatoes, red onion, chicken, and guacamole.
- Squeeze extra lime juice on top before serving.

- Use leftover rotisserie chicken for a quicker option.
- Add hot sauce or jalapeños for extra spice.
