- 4 chicken thighs (bone-in, skin-on)
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup mushrooms, sliced
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken thighs with salt and pepper, then brown them in the skillet for 5 minutes per side. Remove and set aside.
- Add onion, garlic, bell pepper, and mushrooms to the skillet. Cook for 5 minutes until softened.
- Stir in diced tomatoes, chicken broth, oregano, and basil.
- Return chicken to the skillet, cover, and simmer for 25 minutes.
- Serve hot with crusty bread or pasta.
