Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning
  • 1 cup cooked rice
  • 1/2 cup black beans, drained
  • 1/4 cup salsa
  • 1/4 cup shredded cheese
  • 1/4 cup sour cream
  • 1 lime, cut into wedges

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss chicken, bell peppers, and onion with olive oil and fajita seasoning.
  3. Spread on a baking sheet and bake for 20-25 minutes.
  4. Divide rice into meal prep containers.
