- 1 cup white rice, uncooked
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 cup chicken broth
- 1 lime, juiced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced chicken and cook until browned, about 5 minutes.
- Add bell peppers and onion, sauté for 3 minutes.
- Stir in rice and fajita seasoning, coating evenly.
- Pour in chicken broth, cover, and simmer for 15-20 minutes until rice is cooked.
- Remove from heat, drizzle with lime juice, and garnish with cilantro.
- Serve warm.
