Description

A delicious and easy-to-make chicken scampi served with garlic parmesan rice.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 4 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley

Instructions

  1. Cook rice in chicken broth according to package instructions.
  2. Season chicken breasts with salt and pepper.
  3. Heat olive oil in a pan over medium heat.
  4. Cook chicken for 5-6 minutes per side until golden and cooked through.
  5. Remove chicken and set aside.
  6. In the same pan, melt butter and sauté garlic for 1 minute.
  7. Add cooked rice, parmesan cheese, lemon juice, and red pepper flakes.
  8. Stir well to combine.
  9. Slice chicken and serve over garlic parmesan rice.
  10. Garnish with fresh parsley.

  • Use freshly grated parmesan for best flavor.
  • Adjust red pepper flakes to your preferred spice level.
  • For creamier rice, add an extra tbsp of butter.
