Description
A delicious and easy-to-make chicken scampi served with garlic parmesan rice.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup uncooked white rice
- 2 cups chicken broth
- 4 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp chopped fresh parsley
Instructions
- Cook rice in chicken broth according to package instructions.
- Season chicken breasts with salt and pepper.
- Heat olive oil in a pan over medium heat.
- Cook chicken for 5-6 minutes per side until golden and cooked through.
- Remove chicken and set aside.
- In the same pan, melt butter and sauté garlic for 1 minute.
- Add cooked rice, parmesan cheese, lemon juice, and red pepper flakes.
- Stir well to combine.
- Slice chicken and serve over garlic parmesan rice.
- Garnish with fresh parsley.
Notes
- Use freshly grated parmesan for best flavor.
- Adjust red pepper flakes to your preferred spice level.
- For creamier rice, add an extra tbsp of butter.
