- 6 bone-in, skin-on chicken thighs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/4 cup chicken broth
- 2 tbsp olive oil
- 1 medium onion, sliced
- 3 cloves garlic, minced
Instructions
- Season chicken thighs with salt, pepper, garlic powder, onion powder, paprika, thyme, and rosemary.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken thighs for 2-3 minutes per side until browned. Transfer to the crockpot.
- Add sliced onion and minced garlic to the skillet. Cook for 2 minutes until softened. Scrape into the crockpot.
- Pour chicken broth into the crockpot.
- Cover and cook on low for 6 hours or high for 3-4 hours, until chicken is tender.
- Serve warm with your favorite sides.
Notes
- For crispier skin, broil the cooked thighs for 2-3 minutes before serving.
- Substitute boneless thighs if preferred, but reduce cook time by 1 hour.
