- 6 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 large onion, sliced
- 3 carrots, chopped
- 3 potatoes, cubed
- 2 cups chicken broth
- 1 tablespoon fresh thyme
Instructions
- Preheat oven to 350°F (175°C).
- Season chicken thighs with salt, pepper, garlic powder, onion powder, and paprika.
- Heat olive oil in a large oven-safe pot over medium-high heat.
- Sear chicken thighs skin-side down for 5 minutes until golden brown, then flip and sear for another 3 minutes. Remove and set aside.
- Add onion, carrots, and potatoes to the pot. Cook for 5 minutes until slightly softened.
- Pour in chicken broth and stir in fresh thyme.
- Return chicken thighs to the pot, skin-side up.
- Cover and transfer to the oven. Roast for 45 minutes.
- Remove lid and roast for another 15 minutes to crisp the skin.
- Serve hot.

- You can substitute chicken thighs with drumsticks or .

- For extra flavor, deglaze the pot with white wine before adding broth.
