- 1.5 lbs boneless, skinless chicken thighs
- 1/4 cup soy sauce
- 1/4 cup hoisin sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/2 tsp red pepper flakes
- 1/2 cup chicken broth
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tbsp cornstarch (optional, for thickening)
- 2 tbsp water (optional, for thickening)
- Green onions, for garnish
Instructions
- Place chicken thighs in the crockpot.
- In a bowl, mix soy sauce, hoisin sauce, honey, garlic, ginger, red pepper flakes, and chicken broth. Pour over chicken.
- Add bell pepper and onion on top.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- If desired, mix cornstarch and water in a small bowl, then stir into the crockpot to thicken the sauce. Cook for an additional 10 minutes.
- Garnish with green onions before serving.
Notes
- You can use chicken instead of thighs, but adjust cooking time to prevent dryness.
- For extra flavor, marinate the chicken in the sauce for 30 minutes before cooking.
