Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup hoisin sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1/2 tsp red pepper flakes
  • 1/2 cup chicken broth
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 tbsp water (optional, for thickening)
  • Green onions, for garnish

Instructions

  1. Place chicken thighs in the crockpot.
  2. In a bowl, mix soy sauce, hoisin sauce, honey, garlic, ginger, red pepper flakes, and chicken broth. Pour over chicken.
  3. Add bell pepper and onion on top.
  4. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  5. If desired, mix cornstarch and water in a small bowl, then stir into the crockpot to thicken the sauce. Cook for an additional 10 minutes.
  6. Garnish with green onions before serving.
