Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp chipotle paste
  • 1 lime (juiced)
  • 1 cup corn kernels
  • 1 bell pepper (diced)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder

Instructions

  1. Marinate chicken with chipotle paste, lime juice, salt, pepper, and garlic powder for 15 minutes.
  2. Heat olive oil in a pan over medium heat.
  3. Cook chicken for 6-7 minutes per side until fully cooked.
  4. Remove chicken and set aside.
  5. In the same pan, sauté corn and bell pepper for 5 minutes.
