Ingredients

- 1 cup heavy cream
- 1 cup whole milk
- 4 oz dark chocolate, finely chopped
- 4 large egg yolks
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 2 tbsp granulated sugar (for topping)
Instructions
- Preheat oven to 325°F (160°C).
- Heat cream and milk in a saucepan until steaming.
- Remove from heat and stir in chocolate until melted.
- Whisk egg yolks, sugar, and vanilla in a bowl.
- Slowly pour chocolate mixture into egg mixture while whisking.
- Strain mixture into ramekins.
- Place ramekins in a baking dish and fill with hot water halfway up the sides.
- Bake for 35-40 minutes until set but slightly jiggly.
- Chill for at least 4 hours.
- Sprinkle sugar on top and caramelize with a torch.

- Use high-quality chocolate for best results.
- Do not skip straining the mixture for a smooth texture.
