Ingredients

  • 200g dark chocolate
  • 100g unsalted butter
  • 4 large eggs, separated
  • 100g granulated sugar
  • 1 tsp vanilla extract
  • 200ml heavy cream
  • 1 tbsp cocoa powder (for dusting)

Instructions

  1. Melt the chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth and set aside to cool slightly.
  2. In a large bowl, beat the egg yolks with half the sugar until pale and creamy. Stir in the vanilla extract.
  3. Gently fold the melted chocolate mixture into the egg yolk mixture.
  4. In a separate bowl, whip the heavy cream until soft peaks form.
  5. In another clean bowl, beat the egg whites until foamy. Gradually add the remaining sugar and beat until stiff peaks form.
  6. Carefully fold the whipped cream into the chocolate mixture, then gently fold in the beaten egg whites.
  7. Pour the mixture into a prepared cake tin and refrigerate for at least 4 hours, or overnight, until set.
  8. Dust with cocoa powder before serving.
