Ingredients

- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 lime, juiced
- 1/4 cup cilantro, chopped
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked rice
- 1 avocado, sliced
- 1/2 cup corn kernels
- 1/2 cup black beans, rinsed
Instructions
- Heat olive oil in a pan over medium heat.
- Add shrimp and cook for 2-3 minutes per side.
- Add garlic, lime juice, cilantro, salt, and pepper. Stir well.
- Cook for another minute until shrimp is done.
- Serve over rice with avocado, corn, and black beans.
