- 4 rice paper wrappers
- 1 cup cooked shrimp, peeled and sliced
- 1 cup thinly sliced cucumber
- 1 cup shredded carrots
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1 cup rice vermicelli noodles, cooked
Instructions
- Soak one rice paper wrapper in warm water for 5-10 seconds until soft.
- Lay the wrapper flat on a clean surface.
- Layer shrimp, cucumber, carrots, mint, cilantro, and noodles in the center.
- Fold the sides inward and roll tightly.
- Repeat with remaining wrappers and ingredients.
Notes
- Keep ingredients dry to prevent tearing.
- Serve with peanut or hoisin dipping sauce.
- Store rolls covered with a damp towel to retain freshness.
