Ingredients

- 2 lbs beef chuck roast, cubed
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) diced tomatoes
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp cornstarch (optional, for thickening)
Instructions
- Place beef, onion, garlic, and bell pepper in the crockpot.
- Add diced tomatoes, beef broth, Worcestershire sauce, smoked paprika, chili powder, salt, and black pepper.
- Stir well to combine.
- Cover and cook on low for 8 hours or on high for 4 hours.
- If a thicker sauce is desired, mix cornstarch with 2 tbsp water and stir into the crockpot during the last 30 minutes of cooking.
- Serve hot over mashed potatoes or rice.
Notes
- For extra flavor, sear the beef before adding it to the crockpot.
- Adjust spices to your taste.
