Ingredients
Scale
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped
- 1 onion, diced
- 2 cans (15 oz each) white beans, drained and rinsed
- 4 cups vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and sauté until soft, about 5 minutes.
- Stir in garlic and rosemary, cook for 1 minute.
- Add white beans, broth, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Remove bay leaf and blend half the soup for creaminess.
- Serve hot.
Notes
- For extra creaminess, blend the entire soup.
- Garnish with fresh rosemary or a drizzle of olive oil.
- Store leftovers in an airtight container for up to 3 days.
