Ingredients

  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 onion, diced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and sauté until soft, about 5 minutes.
  3. Stir in garlic and rosemary, cook for 1 minute.
  4. Add white beans, broth, salt, pepper, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Remove bay leaf and blend half the soup for creaminess.
  7. Serve hot.
