Ingredients

  • 2 cups cooked chicken, shredded
  • 8 flour tortillas
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F.
  2. Mix shredded chicken with 1/2 cup sour cream and 1/2 cup Monterey Jack cheese.
  3. Fill tortillas with chicken mixture, roll them up, and place seam-side down in a baking dish.
  4. Melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute.
  5. Gradually whisk in chicken broth until smooth. Cook until thickened.
  6. Remove from heat and stir in remaining sour cream, garlic powder, salt, and pepper.
  7. Pour sauce over enchiladas and sprinkle with remaining cheeses.
  8. Bake for 20-25 minutes until bubbly and golden.
