Instructions
- Heat olive oil in your large pot over medium heat.
- Add your onion, celery, and carrots. Cook for 5 minutes.
- Stir in your garlic and cook for 1 minute.
- Sprinkle flour over your vegetables. Stir well.
- Pour in half-and-half and chicken broth. Stir constantly.

- Add your gnocchi and cook until they float.
- Stir in your cooked chicken, spinach, and thyme.
- Simmer for 5 minutes.
- Season with salt and pepper. Serve hot.
