A creamy and flavorful white chicken chili that’s easy to make and perfect for any occasion.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) green chilies
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup heavy cream
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until soft, about 5 minutes.
  2. Add minced garlic and cook for 1 minute.
  3. Add chicken breasts, white beans, corn, green chilies, chicken broth, cumin, oregano, salt, and black pepper. Stir to combine.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes or until chicken is cooked through.
  5. Remove chicken from the pot and shred with two forks. Return shredded chicken to the pot.
  6. Stir in heavy cream and Monterey Jack cheese until cheese is melted.
  7. Serve hot with your favorite toppings.

Notes

  • For a thicker chili, mash some of the beans before adding them to the pot.
  • You can use rotisserie chicken to save time.
  • Top with avocado, cilantro, or sour cream for extra flavor.
