Description

- 1 medium head cauliflower, cut into florets
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1/4 cup olive oil
- 1/2 cup Greek yogurt
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- Dip each cauliflower floret into the beaten eggs, then coat with the breadcrumb mixture.
- Place the coated florets on the baking sheet and drizzle with olive oil.
- Bake for 20-25 minutes, flipping halfway, until golden and crispy.
- While baking, mix Greek yogurt, minced garlic, lemon juice, and parsley to make the garlic sauce.
- Serve the crispy cauliflower bites hot with the garlic sauce.
Notes
- For extra crispiness, spray the florets lightly with cooking oil before baking.
- Adjust the spices to your taste preference.
