Crispy baked southwest chicken egg rolls filled with flavorful ingredients and served with a spicy dipping sauce.

- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup red bell pepper, diced
- 1/2 cup green onions, sliced
- 1 cup Monterey Jack cheese, shredded
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 12 egg roll wrappers
- 1 tbsp olive oil
- 1/2 cup sour cream
- 1/4 cup hot sauce
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix chicken, black beans, corn, red bell pepper, green onions, cheese, cumin, chili powder, garlic powder, and salt.
- Place 2 tablespoons of the mixture on each egg roll wrapper.
- Fold the sides of the wrapper inward, then roll tightly.
- Brush each egg roll with olive oil and place on a baking sheet.
- Bake for 15-18 minutes until golden and crispy.
- Mix sour cream and hot sauce to make the spicy dipping sauce.
- Serve the egg rolls hot with the dipping sauce.
Notes
- Use rotisserie chicken for quicker prep.
- Adjust hot sauce to your preferred spice level.
- Store leftovers in an airtight container for up to 2 days.
