- 2 cups mashed potatoes
- 1 egg
- 1/4 cup all-purpose flour
- 1/4 cup grated cheese (optional)
- 2 tbsp chopped green onions
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp butter or oil for frying
Instructions
- Mix mashed potatoes, egg, flour, cheese, green onions, salt, and pepper in a bowl.
- Heat butter or oil in a skillet over medium heat.
- Scoop about 1/4 cup of the mixture per pancake and flatten slightly in the skillet.
- Cook for 3-4 minutes per side until golden brown and crispy.
- Drain on paper towels before serving.
Notes
- Use cold mashed potatoes for better texture.
- Adjust seasoning to taste.
- Serve with sour cream or applesauce for dipping.
