- 1 lb baby potatoes
- 1/2 cup grated parmesan cheese
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F.
- Wash and dry baby potatoes, then halve them.
- Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Press cut side of potatoes into grated parmesan.
- Place potatoes parmesan-side down on a baking sheet.
- Bake for 25-30 minutes until golden and crispy.
- Sprinkle with fresh parsley before serving.

- Use freshly grated parmesan for best results.
- Flip potatoes halfway through baking for even crispness.
- Serve immediately for maximum crunch.
