Ingredients

- 1 cup cooked red lentils
- 1 medium sweet potato, mashed
- 1/2 cup breadcrumbs
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Boil the red lentils until tender, then drain and set aside.
- Peel and boil the sweet potato until soft, then mash it.
- Mix the lentils, mashed sweet potato, breadcrumbs, onion, garlic, cumin, paprika, salt, and pepper in a bowl.
- Form the mixture into small patties.
- Heat olive oil in a pan over medium heat.
- Fry the patties for 3-4 minutes on each side until crispy and golden brown.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- You can bake the patties at 375°F for 20 minutes if you prefer a healthier option.
