- 1 lb andouille sausage, sliced
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup chicken broth
- 1 tsp paprika
- 1/2 tsp thyme
- 1/2 tsp black pepper
Instructions
- Place sausage, onion, bell pepper, and garlic in the crockpot.
- Add diced tomatoes, chicken broth, paprika, thyme, and black pepper.
- Stir to combine.
- Cover and cook on low for 6 hours.
- Serve hot.

- For extra spice, add cayenne pepper.
