Ingredients

- 1 lb dried beans (your choice)
- 6 cups water or broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 can diced tomatoes (14 oz)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp paprika
- 2 bay leaves
Instructions
- Rinse the dried beans and soak them overnight. Drain before using.
- Add all ingredients to the crockpot.
- Cook on low for 8 hours or high for 4-5 hours until beans are tender.
- Remove bay leaves before serving.
- Adjust seasoning if needed.

- Soaking beans reduces cooking time and improves digestibility.
