Ingredients

- 2 boneless, skinless chicken
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1 cup frozen peas and carrots (optional)
Instructions
- Place chicken at the bottom of the crockpot.
- Add rice, onion, garlic, salt, pepper, thyme, and paprika.
- Pour chicken broth over the ingredients.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- Shred the chicken and stir in peas and carrots if using.
- Let sit for 5 minutes before serving.
Notes
- For extra flavor, brown the chicken before adding to the crockpot.
- Adjust broth if you prefer a softer or firmer rice texture.
- Store leftovers in an airtight container for up to 3 days.
