Ingredients

- 1 cup shelled edamame
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup sliced red bell pepper
- 2 tbsp chopped cilantro
- 2 tbsp sesame seeds
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp grated ginger
- 1 tsp sesame oil
Instructions
- Cook edamame according to package instructions, then cool.
- In a large bowl, combine edamame, cabbage, carrots, red bell pepper, and cilantro.
- In a small bowl, whisk together soy sauce, rice vinegar, honey, ginger, and sesame oil.
- Pour dressing over the salad and toss to coat evenly.
- Sprinkle sesame seeds on top before serving.

- For extra crunch, add chopped peanuts.
