Ingredients

- 2 large cucumbers, sliced
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp red pepper flakes
- 1 clove garlic, minced
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp water
- 1 tbsp chopped peanuts (for garnish)
Instructions
- Slice cucumbers and set aside.
- In a bowl, mix peanut butter, soy sauce, sesame oil, red pepper flakes, garlic, honey, rice vinegar, and water.
- Toss the cucumbers in the sauce until evenly coated.
- Garnish with chopped peanuts.
- Serve immediately or chill for 30 minutes.
Notes
- Adjust spice level by adding more or less red pepper flakes.
- Use smooth or chunky peanut butter based on preference.
- For extra crunch, leave cucumber skins on.
