- 200g dark chocolate (70% cocoa)
- 250g cream cheese
- 150g fresh raspberries
- 100g sugar
- 3 eggs
- 1 tsp vanilla extract
- 150g digestive biscuits
- 75g melted butter
Instructions
- Preheat oven to 160°C (320°F).
- Crush digestive biscuits and mix with melted butter. Press into a springform pan.
- Melt dark chocolate and let it cool slightly.
- Beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each.
- Fold in melted chocolate and raspberries.
- Pour mixture over the biscuit base.
- Bake for 45 minutes or until set.
- Cool completely before refrigerating for at least 4 hours.
Notes
- Use room temperature cream cheese for smoother texture.
- Fresh raspberries can be replaced with frozen if needed.
- Chill cheesecake overnight for best results.
